Coconut Chia Jelly

Add all ingredients except chia seeds into a small pot and bring to the boil. Keep boiling for 15 minutes and remove from heat. Stir through chia seeds and then pour into a large silicone mould or smaller shaped moulds.

Leave to set at room temperature for about 30 minutes. Refrigerate and cut to serve as needed.
